If you want to obtain the optimal health benefits from fresh vegetables, they shouldn¡¦t be kept in the refrigerator for long periods of time. A study published in the Journal of Agricultural and Food Chemistry reported five groups of vegetables were kept for seven days at 34„aF followed by three more days at 59„aF. Vitamin C didn¡¦t decrease much, but all other nutrient values declined by 50 to 80 percent.
